What is Wagyu beef?
Wagyu is a type of Japanese cattle known for producing exceptionally marbled beef. The word “Wagyu” literally means “Japanese cow.” Wagyu genetics are prized for their ability to develop fine intramuscular fat, which creates the rich flavor, tenderness, and buttery texture Wagyu is famous for.

What makes Wagyu different from regular beef?
The biggest difference is the marbling. Wagyu develops fine streaks of fat throughout the muscle rather than simply having fat around the outside of the cut. As that marbling melts during cooking, it adds moisture, tenderness, and a rich flavor that makes Wagyu a completely different eating experience from conventional beef.

What is marbling?
Marbling refers to the small streaks and flecks of intramuscular fat found throughout the meat. Higher levels of fine, evenly distributed marbling generally contribute to greater tenderness, juiciness, and flavor.

Why is Wagyu more expensive?
Producing high-quality Wagyu requires specialized genetics, careful breeding, quality nutrition, and significantly more time and management than conventional beef production. The limited supply and exceptional eating quality also contribute to its premium price.

Does Wagyu taste different from regular beef?
Yes. Wagyu is known for being exceptionally tender, juicy, and rich. The abundant marbling creates a buttery texture and deep beef flavor. Because it is so rich, even a smaller portion can be very satisfying.

What are the benefits of Wagyu beef?
Beyond its tenderness and flavor, Wagyu fat has a different fatty-acid profile than many conventional beef products. Research has found Wagyu can contain relatively high levels of monounsaturated fatty acids, including oleic acid. It also provides the protein, iron, zinc, vitamin B12, and other nutrients naturally found in beef. 

How should I cook Wagyu?
Keep it simple. Wagyu doesn't need heavy marinades or complicated seasonings. Salt, pepper, and a hot skillet or grill are usually all you need. Because of the higher fat content, watch for flare-ups when grilling and avoid overcooking premium steaks.

What's the best Wagyu cut for someone trying it for the first time?
Ribeye and NY strip are excellent choices if you want to experience Wagyu's signature marbling. Filet is a great choice for someone who prioritizes tenderness, while Wagyu ground beef is an approachable way to experience Wagyu without starting with a premium steak.

Is Wagyu worth it?
If you value exceptional marbling, tenderness, and rich flavor, Wagyu offers an experience that's difficult to replicate with conventional beef. You don't necessarily have to replace your everyday beef with Wagyu - it's also perfect for special dinners, gifts, celebrations, or simply treating yourself.
